Hello lovelies and happy Monday!!! It feels so good to be back home after a nice little getaway to Vegas this past weekend, and there will most definitely be a post coming soon. Our drive home was probably the highlight of the trip (Not!) when our five hour drive turned into a 8.5 hour drive!!! We even took a little video to document the craziness that ensued. And I'm hoping that this is the week where I can finally blog again. Spring Break is only five days away. Eeks! I definitely need it and am ready for a full eight hours of sleep. I'm crossing my fingers that this week goes smoothly and my kids don't go crazy with me. Today they were adorable so hopefully luck is on my side.
So something that I absolutely LOVE doing is cooking! And, somehow, I still manage to make fresh meals around four night a week on top of everything else. I definitely have a system and am looking at spicing it up a bit as well as making it a bit more budget friendly, but I thought I'd share with you what's our meal plan for the week. We save so much money and feel much better about ourselves when we eat some good, home cooked meals.
The Mr. sometimes calls my food "rabbit food" because we eat lots of veggies, but he's not complaining because I do the cooking. One thing that we are really aware of right now is how we can save money because gas prices are killing us. We usually spend around $80 a week on groceries and some weeks we spend $100, but I'd really like to bring that down a bit. So this week we really tried to use what was already in the pantry and fridge as well as some budget friendly meals.
Our Weekly Menu:
Monday- Taco Salad with ground turkey
(We bought a big pack of ground turkey from Costco a couple weeks ago so we already have the meat in the freezer)
Tuesday- Black Bean and Sweet Potato Tacos
(They sound crazy, but trust me, they are delicious!!!)
(Bell peppers and flank steak were both on sale at Sprouts, so this is a winner)
Thursday- Leftovers
Friday- Whole Wheat Pasta with homemade tomato sauce, sausage, and asparagus
(This is going to be a creation of mine, and if it turns out good then I promise I'll post it!)
Saturday- We will most likely eat out after our church conference this night :)
We always try to eat out one night a week and have leftovers once a week, too. When I do make my meal plan for the week I try to sit down with the ad for our local grocery story that I shop at to get some ideas beaded on what's on sale. I'll let you know how everything tastes!

I'm in the same place with trying to save money when it comes to food. I used to go to the grocery store once a month and just a BOATLOAD of everything....and half of the stuff would be thrown away because I didn't use it fast enough. I was wasting money like nobody's business. Now, if I need a couple things from the store, I only go once or twice a week and buy only what I'm using for meals that week. It's helped alot!
